Corn, Zucchini and Tomato Chowder

Nothing says “summer” more than corn, zucchini and tomatoes. Here they’re combined with potatoes in a quick and easy, family friendly chowder.

Ingredient List

  • 3 tablespoons butter
  • 1 medium onion, diced
  • 1/4 cup all-purpose flour
  • 5 cups reduced sodium chicken or vegetable stock or broth
  • 3 medium Yukon Gold potatoes, peeled and cut into 1/2-inch dice
  • 1 teaspoon sea salt or kosher salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchini, cut into 1/2-inch dice
  • 1 1/2 cups corn kernels, fresh or frozen
  • 1 can (14.5 oz) Muir Glen™ Organic Diced Tomatoes or 1 can (14.5 oz) Muir Glen™ Organic Fire Roasted Diced Tomatoes, drained
  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon hot sauce
  • 3 tablespoons chopped fresh basil leaves, plus additional for garnish

Preparation

  1. In 5-quart saucepan, heat butter over medium heat. Coon onion in butter about 6 minutes, stirring occasionally, until softened. Sprinkle in the flour; cook and stir 2 minutes.
  2. Stir in stock, potatoes, salt and pepper; heat to boiling. Reduce heat to low; simmer about 15 minutes or until potatoes are just tender.
  3. Stir in zucchini, corn, tomatoes and cream. Heat to boiling. Reduce heat; simmer 5 to 10 minutes or until vegetables are just tender. Stir in hot sauce and basil. Serve in bowls; garnish with additional basil.

Tips

  • Yukon Gold potatoes have a dense, waxy texture that will hold together well in this chowder.
