Tomatoes, fresh mozzarella and basil is a classic flavor combination that’s put to good use in this 40-minute meal.

Ingredient List

  • 1 3/4 cups from 1 can (28 oz) Muir Glen™ Organic Fire Roasted Diced Tomatoes, undrained
  • 8 oz fresh mozzarella cheese, cut into 1/2-inch cubes
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1 clove garlic, finely chopped
  • 1 teaspoon fine sea salt or kosher salt
  • 1/4 teaspoon black pepper
  • 12 oz uncooked penne pasta
  • 1/4 cup chopped fresh basil leaves

Preparation

  1. In medium bowl, mix tomatoes, mozzarella cheese, oil, vinegar, garlic, salt and pepper; set aside.
  2. In large pot of boiling salted water, cook pasta until just tender but still firm to bite. Drain. Return pasta to pot. Add tomato mixture and basil; toss gently to blend. Serve warm.

Tips

  • While this pasta is hearty enough to be a main course, it also works well as a side dish to grilled meats.
